PENGENDALIAN MUTU TUNA STEAK DENGAN METODE FAILURE MODE AND EFFECTS ANALYSIS (FMEA) DI PT. YAKIN PASIFIK TUNA KOTA BANDA ACEH

Abstract

Tuna is one of Indonesia’s marine resources and can be processed into various products, one of which is tuna steak. The purpose of this study was to analyze the quality of fresh tuna raw materials and frozen tuna steak (including organoleptic tests, total plate count, and histamine levels) at PT. Yakin Pasifik Tuna using the Failure Mode and Effects Analysis (FMEA) method. This method was applied to identify factors and potential causes of quality variations in tuna steak based on critical points and critical conditions. The results show that there are three critical conditions that become top priorities for corrective action due to their high RPN values, which reach the critical threshold: excessive product accumulation during temporary storage, physical damage to raw materials, and leakage in packaging. Recommended improvements for these three critical conditions include conducting routine inspections in raw material storage areas, ensuring product size or quantity matches packaging capacity, and establishing commitments with suppliers regarding raw material handling to ensure good-quality inputs.
