EVALUASI PENERAPAN GOOD MANUFACTURING PRACTICES (GMP) PADA IKAN TUNA BEKU DI CV XYZ BANDA ACEH

Abstract

CV. XYZ is a company engaged in the processing of fresh and frozen fish. CV. XYZ produces various types of products such as skipjack tuna, tuna, marlin, and milkfish. Fish production is usually sold in the domestic market and exported. This company focuses more on domestic markets, such as Jakarta and Medan. CV. XYZ's export destination countries are Japan, Malaysia, Singapore, and China. The evaluation of GMP implementation at CV. XYZ in this study was carried out based on GMP guidelines, namely the Decree of the Head of the Food and Drug Supervisory Agency of the Republic of Indonesia No. HK.02.02.1.2.01.22.63 of 2022 concerning Guidelines for Inspection of Processed Food Production Facilities, and Regulation of the Head of BPOM No. HK.03.1.23.04.12.2206 of 2012 concerning Good Food Production Practices. The assessment of GMP implementation in the fish freezing business was also carried out using the gap analysis method. The purpose of this study is to determine and analyze the evaluation of the implementation of GMP in CV. XYZ, starting from initial handling, production process, sanitation, to ready-to-sell products in the form of frozen fish. In addition, identification of non-conformity factors in the implementation of GMP was also carried out. The findings of conformity in CV. XYZ were around 58 points from 22 GMP aspects. The findings of non-conformity were around 12 points from 8 GMP aspects consisting of 4 points of minor non-conformity and 8 points of major non-conformity. The results of the assessment of the implementation of GMP in CV. XYZ were a score of 12, level (rating) D (very poor) due to the presence of 3 critical non-conformity findings.
