Pemalang is known as a center for honey-pineapples, which have a distinctive sweet taste and significant economic potential. However, local farmers have not yet achieved maximum profits due to limitations in processing and marketing. The selling price of honey pineapples from farmers is relatively low, while market prices are much higher. To address this issue, a community service activity was conducted in the form of farmer mentoring through three stages: a local potential survey, laboratory product trials, and training in processing, packaging, licensing, and marketing. The survey was conducted in Gereja Hamlet, Pulosari Village, Pemalang Regency, with the aim of mapping production and market potential. The product trials resulted in the formulation of three main products: pineapple chili sauce, pineapple syrup, and pineapple sorbet, which were deemed potential because they were easy to produce with simple equipment and had market appeal. Furthermore, the training involved the community, particularly women, in skills in food processing, packaging, economic analysis, and branding strategies. Processed products are then marketed according to Good Manufacturing Practices (GMP) standards and obtain legality through PIRT and NIB permits, thus increasing consumer confidence. The mentoring results indicate that pineapple product diversification can add economic value, extend shelf life, and open up opportunities for group-based micro-enteIDRrises. A business feasibility study indicates that production is feasible due to abundant raw materials, available capital, and a wide market. Therefore, processing honey pineapple into value-added products can be a solution to increase farmer incomes while strengthening the local economy based on regional resources.
