Abstract

Cocoa is one of the leading products of Jembrana Regency, Bali Province. This Community Service activity aimed to optimize cocoa processing into featured product in Asah Duren Village, Pekutatan District, Jembrana Regency. Cocoa has significant economic potential, but processing in this village still faces challenges in terms of techniques and product quality. This community service activity identified factors influencing cocoa processing quality, including seed selection, cultivation techniques, and production processes. The methods used included descriptive analysis and case studies of existing cocoa processing practices. The results of the activity indicate that the application of more modern and environmentally friendly processing techniques can improve the quality of cocoa products, such as chocolate and other processed products. Training and empowerment of farmers in marketing aspects are also crucial to increasing product competitiveness. Based on these findings, it is recommended that the local government and relevant institutions provide support in the form of training and access to improved processing technology. Thus, it is hoped that Asah Duren Village can become a center for superior cocoa production in Jembrana Regency, improving farmer welfare, and contributing to the local economy.
