PENERAPAN GOOD MANUFACTURING PRACTICE (GMP) PADA PRODUKSI BUMBU BUBUK INSTAN 'MEURASA'

Abstract

The partner in the implementation of Pengabdian Kepada Masyarakat Berbasis Produk (PKMBP) is the business of producing instant seasoning powder "Meurasa" in Deah Glumpang Village, Meuraxa District, Banda Aceh City. Increased production and marketing of partner products needs to be accompanied by outreach and assistance in the implementation of Good Manufacturing Practice (GMP) considering that consumer demands for quality assurance and food safety continue to increase. The purpose of this community service activity is to socialize and assist partners in implementing GMP and planning HACCP implementation. Several problems with partners, namely (1) partners use refill water in the powder seasoning production process, do not meet the food safety standards of SNI CAC/RCP 1: 2011; (2) hygiene and sanitation in the production and packaging rooms still allow contamination from the surrounding environment to seasoning products when they are produced and when they are packaged; (3) identification and analysis of hazards and causes of hazards that may occur in raw materials, additives, packaging and production processes have not been carried out. The results of this community service activity are (1) socialization about GMP and its application has been carried out; (2) install a water filtration unit to obtain water that meets the requirements for drinking water quality; (3) carrying out repairs to the production room and packaging room by painting the room and installing exhaust fans in the production room with the aim of sucking up dirty air quickly; and (4) identification and analysis of hazards and causes of hazards that may occur in raw materials, additives, packaging and production processes have been carried out. GMP implementation followed by HACCP implementation planning is an added value for partners to expand marketing.
